Cinnamon Raisin French Toast

Cinnamon Raisin French Toast
Relax. This rich French Toast is prepared the night before so all you have to do in the morning is pop it in the oven, sit back, and enjoy the cinnamon scent that will fill the air.

Ingredients

  • 10 slices cinnamon raisin bread, cubed
  • 2 cups (500 ml) All-Bran Buds* cereal
  • 5 eggs, beaten
  • 1 3/4 cups (425 ml) milk
  • 1 cup (250 ml) brown sugar, divided
  • 1/4 tsp (1 ml) cinnamon
  • 1/4 tsp (1 ml) nutmeg
  • 1/2 cup (125 ml) slivered almonds or walnuts
  • 1/4 cup (50 ml) butter, melted
  • 2 cups (500 ml) fruit, such as berries, bananas, or peaches (optional)

Directions

1. Spread bread and All-Bran Buds* cereal into a greased 9 x 13 inch (23 x 33 cm) pan.

2. In a medium bowl, combine eggs, milk, 3/4 cup (175 ml) brown sugar, cinnamon, and nutmeg. Pour over bread and All-Bran Buds* cereal mixture and toss gently to coat. Cover and refrigerate for at least 8 hours, or overnight. Remove from fridge 30 minutes prior to baking.

3. Preheat oven to 400°F (200°C). Sprinkle bread mixture with nuts. Combine butter and remaining sugar, and drizzle over top. Bake, uncovered, for 20-25 minutes or until set and lightly browned. Cut into 6-8 pieces and serve with fresh fruit.
