1. Stir together flour, sugar, baking powder, cinnamon and salt. Set aside.
2. In a large bowl, combine cereal and milk. Let stand for 5 minutes. Add egg, oil and rind. Beat well. Add flour mixture, stirring until just combined. Spread in greased 2 L (9 x 5") loaf pan.
3. Bake at 180°C (350°F) for about 55 minutes or until wooden pick inserted near centre comes out clean. Let cool 10 minutes before removing from pan. Cool completely before slicing.
