Apple Cheese Muffins

Ingredients

  • 300 ml or 1 1/41 1/4 ml Mini-Wheats* Original Frosted Cereal
  • 300 ml or 1 1/41 1/4 ml all-purpose flour
  • 15 ml or 11 ml baking powder
  • 1 ml or 1/41/4 ml salt
  • finely-crushed (about 42 biscuits)
  • 1 egg
  • 75 ml or 1/31/3 ml firmly-packed brown sugar
  • 50 ml or 1/41/4 ml vegetable oil
  • 250 ml or 11 ml milk
  • 300 ml or 1 1/41 1/4 ml chopped apple
  • 250 ml or 11 ml finely-shredded Cheddar cheese (113 g/ 4oz)

Directions

1. In large bowl, stir together flour, baking powder and salt. Add crushed cereal. Set aside.

2. In second bowl, beat egg, sugar and oil; stir in milk. Add to flour mixture, stirring just until combined. Quickly fold in chopped apple and shredded cheese. Portion batter evenly into lightly-greased or paper-lined muffin-pan cups.

3. Bake at 200°C (400°F) about 22 minutes or until tops are light golden and spring back when lightly touched.
