Apple Gingerbread Cobbler
With the taste of gingerbread, this cobbler is the perfect way to use an abundance of apples, especially during the holiday season.

Ingredients

  • 125 ml or 1/2 cup All-Bran Buds* cereal
  • 1 L or 4 cups sliced, peeled apples
  • 75 ml or 1/3 cup packed brown sugar
  • 15 ml or 1 tbsp soft margarine
  • 45 ml or 3 tbsp water
  • 150 ml or 2/3 cup hot water
  • 50 ml or 1/4 cup molasses
  • 50 ml or 1/4 cup butter
  • 1 egg
  • 250 ml or 1 cup all-purpose flour
  • 50 ml or 1/4 cup granulated sugar
  • 5 ml or 1 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 2 ml or 1/2 tsp ground cinnamon
  • 2 ml or 1/2 tsp ground ginger
  • 1 ml or 1/4 tsp ground cloves

Directions

1. Spread apples in 20 cm (8-inch) square glass baking dish coated with non-stick spray. In small bowl, mix together brown sugar and butter; sprinkle over apples. Sprinkle water over apples. Set aside.

2. In large mixing bowl, mix together cereal, hot water, molasses and butter. Let stand for about 5 minutes or until cereal is softened. Whisk in egg.

3. In medium bowl, mix together flour, sugar, baking soda, salt and spices. Add to cereal mixture, stirring just until combined. Spoon batter over apples.

4. Bake at 180°C (350°F) for about 40 minutes or until apples are tender. Serve warm or cold.
