Apple Muffins

Ingredients

  • 875 ml or 3 1/23 1/2 ml Kellogg's Two Scoops Raisin Bran* cereal
  • 500 ml or 22 ml all-purpose flour
  • 125 ml or 1/21/2 ml granulated sugar
  • 20 ml or 44 ml baking powder
  • 1 ml or 1/41/4 ml salt
  • 5 ml or 11 ml ground cinnamon
  • 1 ml or 1/41/4 ml ground nutmeg
  • 375 ml or 1 1/21 1/2 ml skim milk
  • 50 ml or 1/41/4 ml vegetable oil
  • 30 ml or 22 ml molasses or liquid honey
  • 1 egg lightly beaten
  • 250 ml or 11 ml finely-chopped unpeeled red apple
  • 7 ml or 1 1/21 1/2 ml granulated sugar
  • 1 ml or 1/41/4 ml ground cinnamon

Directions

1. Combine sugar and cinnamon for topping; set aside.

2. In large bowl combine flour, sugar, baking powder, salt, cinnamon and nutmeg; set aside.

3. In medium bowl, combine cereal, milk, oil, molasses and egg; beat well. Stir in apple. Add to flour mixture, stirring just until moistened. Portion batter evenly into 12 large lightly-greased muffin-pan cups. Sprinkle with reserved cinnamon sugar.

4. Bake at 200°C (400°F) 20-25 minutes or until golden brown and top of muffin springs back when lightly touched.
