Applesauce Raisin Loaf

Applesauce Raisin Loaf
Bursting with apple flavour, this moist quick bread is a delicious way to start a lazy Saturday.

Ingredients

  • 250 ml or 1 cup All-Bran Buds* cereal
  • 250 ml or 1 cup all-purpose flour
  • 175 ml or 3/4 cup whole wheat flour
  • 125 ml or 1/2 cup granulated sugar
  • 10 ml or 2 tsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 5 ml or 1 tsp ground cinnamon
  • 1 ml or 1/4 tsp salt
  • 1 ml or 1/4 tsp ground nutmeg
  • 250 ml or 1 cup raisins
  • 375 ml or 1 1/2 cups sweetened applesauce
  • 125 ml or 1/2 cup water
  • 1 egg, lightly beaten
  • 75 ml or 1/3 cup vegetable oil

Directions

1. Combine flours, sugar, baking powder, cinnamon, soda, salt, nutmeg and raisins: set aside.

2. In large mixing bowl, combine cereal with applesauce and water. Let stand 5 minutes. Add egg and oil. Beat well. Add flour mixture, stirring just until combined. Spread evenly in greased 2 L (9 x 5") loaf pan.

3. Bake at 180°C (350°F) about 55 minutes or until wooden pick inserted near centre comes out clean. Cool 10 minutes on wire rack before removing from pan. Cool completely before slicing.
