Applesauce Raisin Muffins
These moist, low-fat muffins are filled with the flavours of fall and are absolutely swoon-worthy on a chilly fall morning.

Ingredients

  • 500 ml or 2 cups All-Bran Original* cereal
  • 175 ml or 3/4 cup all-purpose flour
  • 125 ml or 1/2 cup whole wheat flour
  • 125 ml or 1/2 cup sugar
  • 15 ml or 1 tbsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 5 ml or 1 tsp cinnamon
  • 375 ml or 1 1/2 cup unsweetened applesauce
  • 50 ml or 1/4 cup fat-free milk
  • 125 ml or 1/2 cup raisins
  • 2 egg whites

Directions

1. Stir together flour, sugar, baking soda, baking powder, salt and cinnamon. Set aside.

2. In large mixing bowl, combine cereal, applesauce and milk. Let stand about 5 minutes or until cereal softens. Add egg whites. Beat well. Add raisins and flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

3. Bake at 200°C (400°F) for 20 minutes or until lightly browned. Serve warm.
