Apricot Date Muffins
Bursting with dried fruit, these muffins are made with orange juice for even more flavour.

Ingredients

  • 500 ml or 2 cups All-Bran Flakes* cereal
  • 175 ml or 3/4 cup all-purpose flour
  • 125 ml or 1/2 cup whole-wheat flour
  • 125 ml or 1/2 cup granulated sugar
  • 10 ml or 2 tsp baking powder
  • 2 ml or 1/2 tsp ground cinnamon
  • 1 ml or 1/4 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 250 ml or 1 cup orange juice
  • 1 egg
  • 50 ml or 1/4 cup vegetable oil
  • 75 ml or 1/3 cup finely-chopped dried apricots
  • 75 ml or 1/3 cup finely-chopped pitted dates

Directions

1. Stir together flours, sugar, baking powder, cinnamon, soda and salt. Set aside.

2. In large bowl mix cereal and orange juice. Let stand 2 minutes to soften cereal, stirring once. Add egg, oil, apricots and dates. Beat well. Add flour mixture, stirring just until combined. Spoon batter evenly into lightly-greased 6 cm (2 1/2") muffin-pan cups.

3. Bake at 200°C (400°F) 18-20 minutes or until golden brown and tops spring back when lightly touched.
