- 250 ml or 1 cupAll-Bran Original* cereal
- 175 ml or 3/4 cupall-purpose flour
- 125 ml or 1/2 cupwhole wheat flour
- 125 ml or 1/2 cupgranulated sugar
- 10 ml or 2 tspbaking powder
- 1 ml or 1/4 tspbaking soda
- 1 ml or 1/4 tspsalt
- 300 ml or 1 1/4 cupmashed fully ripe bananas (3 medium)
- 75 ml or 1/3 cupskim milk
- 5 ml or 1 tspvanilla extract
- 50 ml or 1/4 cupvegetable oil
- 1egg
- 125 ml or 1/2 cupraisins
Directions
1. Combine flours, sugar, baking powder, soda and salt. Set aside 2. In large bowl, combine bananas, cereal, milk and vanilla. Let stand about 5 minutes or until cereal is softened. Add oil, egg and dates; beat well. Add flour mixture, stirring just until combined. Portion batter evenly into lightly greased muffin pan cups. 3. Bake at 200°C (400°F) 18-20 minutes or until golden brown and firm to the touch.
