Banana Raisin Muffins
These moist muffins are so good that mornings might become something you dream about.

Ingredients

  • 250 ml or 1 cup All-Bran Original* cereal
  • 175 ml or 3/4 cup all-purpose flour
  • 125 ml or 1/2 cup whole wheat flour
  • 125 ml or 1/2 cup granulated sugar
  • 10 ml or 2 tsp baking powder
  • 1 ml or 1/4 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 300 ml or 1 1/4 cup mashed fully ripe bananas (3 medium)
  • 75 ml or 1/3 cup skim milk
  • 5 ml or 1 tsp vanilla extract
  • 50 ml or 1/4 cup vegetable oil
  • 1 egg
  • 125 ml or 1/2 cup raisins

Directions

1. Combine flours, sugar, baking powder, soda and salt. Set aside

2. In large bowl, combine bananas, cereal, milk and vanilla. Let stand about 5 minutes or until cereal is softened. Add oil, egg and dates; beat well. Add flour mixture, stirring just until combined. Portion batter evenly into lightly greased muffin pan cups.

3. Bake at 200°C (400°F) 18-20 minutes or until golden brown and firm to the touch.

TIP: Substitute raisins with 1/2 cup of chopped, pitted dates for a different flavour
