Mexican Bean Dip

Mexican Bean Dip
When everyone gathers round on game day, this Mexican-inspired dip that combines smooth beans and chunky salsa might just be the main attraction.

Ingredients

  • 1 can (398ml/ 14 oz.) refried beans
  • 250 ml or 1 cup All-Bran Original* cereal
  • 175 ml or 3/4 cup medium chunky salsa
  • 50 ml or 1/4 cup finely-chopped onion
  • 5 ml or 1 tsp chili powder
  • 2 ml or 1/2 tsp ground cumin
  • 75 ml or 1/3 cup plain, low-fat yogurt
  • 2 green onions,
  • 1 small tomato,

Directions

1. In a mixing bowl, combine beans, crushed cereal, salsa, onion, chili powder and cumin; mix well.

2. Spread mixture in serving dish, to about 2.5 cm ( 1" ) thickness. Cover and refrigerate for at least 1 hour and up to 2 days.

3. To serve, top with swirls of yogurt and sprinkle with green onions and tomato.

Serving suggestions: crackers, baked tortillas or fresh vegetables such as celery and zucchini sticks and cucumber slices.
