Bran Muffins
A little more cinnamon, apple instead of raisins. Go ahead and tweak this recipe until it’s your kind of perfect.

Ingredients

  • 625 ml or 2 1/2 cups All-Bran Flakes* cereal
  • 325 ml or 1 1/3 cups all-purpose flour
  • 15 ml or 1 tbsp baking powder
  • 2 ml or 1/2 tsp ground cinnamon
  • 1 ml or 1/4 tsp ground nutmeg
  • 1 ml or 1/4 tsp salt
  • 300 ml or 1 1/4 cups milk
  • 1 egg
  • 50 ml or 1/4 cup vegetable oil
  • 50 ml or 1/4 cup firmly-packed brown sugar
  • 125 ml or 1/2 cup raisins or finely-cut pitted dates

Directions

1. Stir together flour, baking powder, cinnamon, nutmeg and salt. Set aside.

2. In large mixing bowl, stir together cereal and milk. Let stand 2-3 minutes or until cereal is softened. Add egg, oil and brown sugar. Beat well. Stir in raisins or finely-cut pitted dates. Add flour mixture, stirring just until combined. Portion batter evenly into lightly-greased muffin-pan cups.

3. Bake at 200°C (400°F) 20 minutes or until browned and top of muffins spring back when lightly touched.
