Carrot Raisin Bran Cookies

Carrot Raisin Bran Cookies
Wholesome, moist and delicious! These cookies will become a family favourite.

Ingredients

  • 750 ml or 3 cups All-Bran Flakes* cereal
  • 375 ml or 1 1/2 cup all-purpose flour
  • 5 ml or 1 tsp ground cinnamon
  • 2 ml or 1 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 125 ml or 1/2 cup soft (tub) margarine
  • 175 ml or 3/4 cup firmly-packed brown sugar
  • 1 egg
  • 375 ml or 1 1/2 cup grated carrots
  • 25 ml or 2 tbsp apple juice or water
  • 2 ml or 1/2 tsp vanilla extract
  • 250 ml or 1 cup raisins

Directions

1. Stir together flour, cinnamon, soda and salt; set aside.

2. In large bowl cream together margarine and sugar until fluffy; beat in egg. Add carrots, juice and vanilla; mix well. Stir in flour mixture, then cereal and raisins until well combined.

3. Drop by rounded 15 ml (tablespoonful) about 5 cm (2") apart onto ungreased baking sheets.

4. Bake at 190°C (375° F) 8-10 minutes or until golden brown. Remove to racks to cool completely before storing.
