Layered Salad
Made with eggs, tomatoes, rapini and herbs, this hearty salad is a perfect balance of sweet, salty, bitter and sour.

Ingredients

  • 3 tomatoes, chopped
  • 3 hard boiled eggs, chopped
  • 500 ml or 2 cups romaine lettuce, chopped
  • 6 stalks of blanched rapini, chopped 1 inch
  • 15 ml or 1 tbsp each of chopped parsley and tarragon
  • 75 ml or 1/3 cup All-Bran Original* cereal
  • 2 celery stalks, chopped to 2.5 cm (1 inch)
  • Vinaigrette (mix all ingredients together) 5 ml (1 tsp) Dijon mustard, 30 ml (2 tbsp) red wine vinegar, 75 ml (5 tbsp) extra virgin olive oil

Directions

1. Start in a large salad bowl by layering half the romaine lettuce. Add half the tomatoes, rapini, celery, eggs and All-Bran Original* cereal in layers, and then repeat the process with the remaining ingredients.

2. Sprinkle the parsley and tarragon over the top layer. Drizzle the salad with the vinaigrette and serve.
