Chewy Spice Cookies

Ingredients

  • 875 ml or 3 1/2 cup Kellogg's Two Scoops Raisin Bran* cereal
  • 625 ml or 2 1/2 cup all-purpose flour
  • 10 ml or 2 tsp baking soda
  • 5 ml or 1 tsp ground cinnamon
  • 5 ml or 1 tsp ground ginger
  • 2 ml or 1/2 tsp ground cloves
  • 175 ml or 3/4 cup soft (tub) margarine
  • 300 ml or 1 1/4 cup firmly packed brown sugar
  • 2 eggs
  • 75 ml or 1/3 cup fancy molasses
  • 175 ml or 3/4 cup raisins

Directions

1. Stir together flour, soda, cinnamon, ginger and cloves. Mix in cereal. Set aside.

2. In large mixer bowl, cream together margarine and sugar. Beat in eggs and molasses. Stir in dry ingredients (crush the cereal to 375 ml to 1 1/2 cup), mixing until well combined. Mix in raisins.

3. Drop dough by rounded 15 ml measure (tablespoonful) 5cm (2") apart onto lightly - greased baking sheets. Flatten with a fork.

4. Bake at 190°C ( 375°F ) 7 - 8 minutes (Do not overbake or cookies will become crunchy rather than chewy). Remove to racks to cool completely. Store in airtight container.
