Chocolate Peanut Butter Cookies

Ingredients

  • 1 L or 4 cups Kellogg's Corn Flakes* cereal
  • OR
  • 250 ml or 1 cup Kellogg's Corn Flake Crumbs*
  • 625 ml or 2 1/22 1/2 ml all-purpose flour
  • 50 ml or 1/4 cup unsweetened cocoa powder
  • 7 ml or 1 1/2 tsp baking soda
  • 2 ml or 1/2 tsp salt
  • 625 ml or 2 1/2 cup firmly packed brown sugar
  • 250 ml or 1 cup unsweetened applesauce
  • 250 ml or 1 cup crunchy peanut butter
  • 2 egg whites
  • 10 ml or 2 tsp vanilla extract
  • vegetable cooking spray

Directions

1. Combine crushed cereal or crumbs, flour, cocoa, baking soda and salt. Set aside.

2. In large bowl, beat together sugar, applesauce, peanut butter, egg whites and vanilla. Stir in cereal mixture until thoroughly combined. Drop by rounded 15 mL (1 tbsp) measure onto baking sheet coated with cooking spray.

3. Bake at 190° C (375° F) about 12 minutes or until lightly browned around edges. Cool on wire racks. Store in airtight container.
