Cinnamon Raisin Muffins
When the weather is frightful, the cinnamon and molasses in these muffins make them a pure delight.

Ingredients

  • 300 ml or 1 1/4 cups all-purpose flour
  • 7 ml or 1 1/2 tsp baking powder
  • 5 ml or 1 tsp ground cinnamon
  • 2 ml or 1/2 tsp ground nutmeg
  • 2 ml or 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 300 ml or 1 1/4 cup milk
  • 50 ml or 1/4 cup vegetable oil
  • 75 ml or 1/3 cup molasses
  • 1 egg
  • 125 ml or 1/2 cup raisins
  • 375 ml or 1 1/2 cup All-Bran Original* cereal

Directions

1. Combine flour, baking powder, cinnamon, nutmeg, soda and salt. Set aside.

2. In a large bowl, combine cereal and milk. Let stand 4 minutes or until cereal is softened. Add oil, molasses and egg. Beat well. Stir in raisins.

3. Add flour mixture, stirring just until combined. Portion batter evenly into 12 lightly greased muffin-pan cups.

4. Bake at 200°C (400°F) about 20 minutes or until firm to the touch.
