Cookies
In just 20 minutes you can bake up these cookies – great for an after school snack.

Ingredients

  • 250 ml or 1 cup all-purpose flour
  • 2 ml or 1/2 tsp baking soda
  • 2 ml or 1/2 tsp salt
  • 125 ml or 1/2 cups soft non-hydrogenated margarine
  • 150 ml or 2/3 cups granulated sugar
  • 5 ml or 1 tsp vanilla extract
  • 1 egg
  • 750 ml or 3 cups Special K* Original cereal

Directions

1. Sift together flour, baking soda and salt.

2. Blend margarine, sugar and vanilla until light and fluffy. Add egg; beat well. Stir in sifted dry ingredients together with 250 ml (1 cup) of Special K* cereal.

3. Roll 5 ml measures (teaspoonfuls) of dough in remaining Special K* cereal, place on ungreased baking sheets.

4. Bake in moderate oven 190°C (375°F) about 10 minutes or until lightly browned.

VARIATIONS:

- Chocolate: Stir in 125 ml (1/2 cup) semi-sweet chocolate pieces with the Special K* cereal.

- Coconut: Stir in 125 ml (1/2 cup) shredded coconut with the Special K* cereal.

- Dates: Stir in 125 ml (1/2 cup) cut dates with the Special K* cereal.
