Cottage Cheese Patties

Cottage Cheese Patties
Perfect for brunch, these veggie packed patties go great with a simple green salad.

Ingredients

  • 30 ml or 22 ml minced onions
  • 50 ml or 1/41/4 ml grated carrots
  • 30 ml or 22 ml minced parsley
  • 500 ml or 22 ml cottage cheese,
  • 5 ml or 11 ml salt
  • 1 ml or 1/41/4 ml pepper
  • 2 ml or 1/21/2 ml paprika
  • 500 ml or 22 ml soft bread crumbs
  • 1 or - egg
  • 30 ml or 22 ml water
  • 500 ml or 22 ml Special K* Original cereal

Directions

- Combine onions, carrots, parsley, cottage cheese and seasonings, mixing thoroughly. Stir in bread crumbs.

- Shape into 6 large patties or 12 small patties.

- Beat egg with water. Dip patties in egg mixture, roll in cereal. Place in greased shallow pan.

- Bake in very hot oven 230°C (450°F) about 8 minutes or until lightly browned and thoroughly heated. Serve at once.
