Fruit and Spice Streusel Muffins
These sweet and spiced muffins are bound to keep you warm all fall and winter long.

Ingredients

  • 50 ml or 1/4 cup all-purpose flour
  • 50 ml or 1/4 cup firmly packed brown sugar
  • 2 ml or 1/2 tsp ground cinnamon
  • 25 ml or 2 tbsp soft margarine
  • n/a Muffin
  • 250 ml or 1 cup All-Bran Original* cereal
  • 250 ml or 1 cup skim milk
  • 1 egg
  • 45 ml or 3 tbsp vegetable oil
  • 300 ml or 1 1/4 cup all-purpose flour
  • 175 ml or 3/4 cup granulated sugar
  • 12 ml or 2 1/2 tsp baking powder
  • 1 ml or 1/4 tsp salt
  • 5 ml or 1 tsp ground cinnamon
  • pinch or 1/8 tsp ground nutmeg
  • 175 ml or 3/4 cup chopped fresh or frozen cranberries
  • 125 ml or 1/2 cup pared, diced apple

Directions

1. Mix flour, sugar, cinnamon and margarine with fork; set aside for topping.

2. In mixing bowl combine cereal and milk; let stand 5 minutes or until most of the moisture is taken up. Add egg and oil; beat well.

3. Stir together flour, sugar, baking powder, salt, cinnamon and nutmeg. Add to cereal mixture, stirring just until combined. Stir in cranberries and apple. Portion batter evenly into 12 greased muffin pan cups. Sprinkle with topping, pressing lightly into batter.

4. Bake at 200°C (400°F) 20 - 25 minutes or until firm to the touch.
