Cranberry-Orange Bran Loaf

Cranberry-Orange Bran Loaf
Equal parts sweet and tart, this is a favourite flavour pairing at its very best.

Ingredients

  • 375 ml or 1 1/2 cups all-purpose flour
  • 175 ml or 3/4 cup granulated sugar
  • 10 ml or 2 tsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 2 ml or 1/2 tsp salt
  • 5 ml or 1 tsp ground cinnamon
  • 500 ml or 2 cups All-Bran Flakes* cereal
  • 250 ml or 1 cup orange juice
  • 1 egg
  • 50 ml or 1/4 cup vegetable oil
  • 250 ml or 1 cup fresh or frozen cranberries, coarsely chopped
  • 125 ml or 1/2 cup raisins
  • 5 ml or 1 tsp grated orange rind

Directions

1. Stir together flour, sugar, baking powder, soda, salt and cinnamon. Set aside.

2. In large bowl, mix cereal and orange juice. Let stand 2 minutes. Add egg and oil. Beat well. Stir in cranberries, raisins and rind. Add flour mixture, stirring just until combined. Spread in greased 2 L (9 x 5") loaf pan.

3. Bake at 180°C (350°F) 50-55 minutes or until golden brown and wooden pick inserted in centre comes out clean. Cool 10 minutes before removing from pan. Cool completely before slicing. Store tightly wrapped in refrigerator.

Variation: When fresh berries are unavailable, mix 1 can (398 ml / 14 fl oz) whole berry cranberry sauce with the cereal and juice; decrease both the sugar and the juice to 50 ml (1/4 cup) each.
