Crisp and Chewy Date Cookies
Dates add a chewy surprise to these crunchy treats.

Ingredients

  • 250 ml or 1 cup all-purpose flour
  • 2 ml or 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 125 ml or 1/2 cup soft non-hydrogenated margarine
  • 150 ml or 2/3 cup firmly-packed brown sugar
  • 1 egg
  • 5 ml or 1 tsp vanilla extract
  • 750 ml or 3 cups Special K* Original cereal
  • 175 ml or 3/4 cup finely-chopped pitted dates

Directions

1. Stir together flour, soda and salt; set aside.

2. In large mixing bowl, cream margarine and sugar thoroughly. Beat in egg and vanilla. Gradually add flour mixture, mixing until combined. Stir in 250 ml (1 cup) of the cereal and dates.

3. Drop slightly rounded 15 ml measures (tablespoonfuls) of soft dough into remaining cereal; roll into balls, coating completely with cereal. Place about 5 cm (2") apart on ungreased cookie sheets.

4. Bake at 190°C (375°F) about 8 minutes or until lightly browned (do not overbake). Cool on sheets 1-2 minutes, then remove to racks to cool completely.
