1. Pat fish fillets with paper towel; set aside.
2. Place cereal in shallow dish or pan. Stir in orange rind, salt, tarragon, pepper and chopped parsley.
3. Melt margarine in small skillet. Carefully dip fish fillets in margarine. Coat with cereal mixture.
4. Place in single layer on oiled or foil-lined shallow baking pan.
5. Bake in preheated 190°C (375°F) oven for 25 minutes or until fish flakes easily when tested with a fork. Do not cover pan or turn fish while baking. Serve with orange slices.
