Dried Cherry Banana Muffins
Move over chocolate chips, tart cherries add a new flavour dimension to classic banana muffins.

Ingredients

  • 375 ml or 1 1/2 cups all purpose flour
  • 10 ml or 2tsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 2 ml or 1 tsp ground cinnamon
  • 375 ml or 1 1/2 cups All-Bran Original* cereal
  • 250 ml or 1 cup buttermilk
  • 250 ml or 1 cup mashed ripe bananas (about 3 bananas)
  • 50 ml or 1/4 cup safflower oil
  • 50 ml or 1/4 cup Naturegg Simply Egg Whites, well shaken
  • 125 ml or 1/2 cup brown sugar, lightly packed
  • 250 ml or 1 cup dried sour cherries

Directions

1. In medium bowl whisk together flour, baking powder, baking soda, salt and cinnamon; set aside.

2. In large bowl combine buttermilk and All-Bran® Original cereal. Let stand for 5 minutes or until cereal is softened.

3. Stir in banana, oil, Naturegg™ Simply Eggs™ and sugar; mix well.

4. Add flour mixture, stirring only until combined. Stir in dried cherries. Do not over-mix.

5. Spoon batter into a twelve cup muffin pan that has been sprayed with no-stick cooking spray or lined with paper liners

6. Bake in centre of preheated 400°F ( 200°C) oven for 20 to 25 minutes or until golden and toothpick inserted into centre comes out clean. Cool on wire rack 5 minutes; remove muffins from pan.

Tip: Substitute some of the all-purpose flour with whole wheat by using 3/4 cup whole wheat flour and 3/4 cup all-purpose.
