Giant Easter Egg

Ingredients

  • 50 ml or 1/41/4 ml margarine or butter
  • 1 pkg or 11 pkg (250g) miniature marshmallows (or 40 regular)
  • 2 ml or 1/21/2 ml vanilla extract (optional)
  • 1.5 L or 66 L Rice Krispies* cereal

Directions

1. In large saucepan over low heat, melt margarine. Add marshmallows; stir until melted and well blended. Remove from heat.

2. Stir in vanilla. Add cereal, stirring until coated.

3. Using lightly-buttered hands and/or a spatula, press mixture onto buttered cookie sheet, then flatten and shape into the form of a giant egg.

4. Once cooled, decorate giant egg with coloured icing, melted chocolate, coloured sugar, candies and nuts, as desired. Thick icing-sugar may be used to "glue" on decorations. For an added touch, use icing to write personalised messages, such as " A Happy Easter" or children’s names on giant egg. The Giant Easter Egg can be displayed on a large tray, surrounded by Easter grass and other festive decorations.

FESTIVE EASTER POPS:

The original recipe for Rice Krispies Squares* also makes fun Easter Pops too! They can be decorated and make ideal gifts for special Easter treats.

Using one Rice Krispies Squares* recipe, follow directions for Festive Egg Pops: For each one, shape 125 ml (1/2 cup) warm cereal mixture into an egg shape, insert a wooden stick through the bottom of the egg. When slightly cooled, create fun patterns and designs on the Festive Egg Pops with colored candies, raisins and icing. Thick icing-sugar may be used to "glue" on decorations.

For added flair, wrap Pops in coloured plastic wrap and tie some festive ribbon around the base of each one. Makes twelve (12) individual Festive Egg Pops.
