Golden Fruit & Nut Bars
Dried fruit and almonds add extra nutrition to these colourful no-bake bars. Chocolate lovers will enjoy them topped with a drizzle of melted bittersweet chocolate.

Ingredients

  • 175 ml or 3/43/4 ml chopped pitted dates
  • 125 ml or 1/21/2 ml sliced almonds, toasted if desired
  • 50 ml or 1/41/4 ml finely chopped dried apricots
  • 2 ml or 1/21/2 ml grated orange rind (optional)
  • 50 ml or 1/41/4 ml margarine or butter
  • 75 ml or 1/31/3 ml corn syrup
  • 75 ml or 1/31/3 ml firmly packed brown sugar
  • 2 ml or 1/21/2 ml vanilla extract
  • 1.5 L or 66 L Kellogg's Corn Flakes* cereal

Directions

1. Mix dates, almonds, apricots and orange rind; set aside.

2. In large heavy saucepan over low heat, melt margarine. Stir in corn syrup and sugar. Cook over medium heat, stirring constantly, until sugar is dissolved and mixture comes to a full boil. Remove from heat.

3. Stir in vanilla. Add cereal and reserved fruit-nut mixture, stirring until evenly coated.

4. Press mixture firmly and evenly into greased 2L (9") square pan. When partially cool, cut into bars. Cool completely.

Microwave Directions:

1. In large microwaveable bowl, microwave margarine at HIGH 30-60 seconds to melt. Mix in syrup and sugar. Microwave at HIGH 2- 2 1/2 minutes or until sugar is dissolved and mixture is bubbly, stirring 3 times. Follow steps 3 and 4 above.
