1. Melt butter in large saucepan set over low heat. Add marshmallows; stir for about 5 minutes or until completely melted. Remove from heat.
2. Immediately stir in cereal until well coated. Scrape into greased 11- x 15-inch baking sheet. Let cool slightly.
3. Scoop mixture into 1/3 cup (75 mL) portions and roll into balls with buttered hands. Insert lollipop stick into centre of each ball. Place on parchment paper–lined baking sheet. Refrigerate for about 30 minutes or until set. Drizzle with melted chocolate, and sprinkle with rainbow sprinkles (if using). Let stand until chocolate hardens.
Tips: To melt white chocolate: Place chocolate in heatproof bowl set over a saucepan of barely simmering water, stirring occasionally, until melted. Alternatively, place chocolate in microwaveable bowl; microwave on medium in 30-second bursts, stirring in between, until melted. Spray measuring cup with cooking spray for easy release.
