Nacho Casserole

Nacho Casserole
Sit down to a soul-satisfying southwestern supper.

Ingredients

  • 250 ml or 1 cup taco sauce
  • 1 or - can (4 oz.) green chilies
  • veggie ground round
  • 500 g or 1 lb lean ground turkey
  • 125 ml or 1/2 cup chopped onions
  • 1 ml or 1/4 tsp. cumin
  • 250 ml or 1 cup refried beans
  • 125 ml or 1/2 cup plain non-fat yogurt
  • 250 ml or 1 cup shredded reduced-fat cheddar cheese
  • 50 ml or 1/4 cup water
  • 1 L or 4 cups Special K* Original cereal
  • - chopped tomatoes
  • - chopped green onions
  • - sliced olives
  • - reduced-fat sour cream

Directions

1. Combine taco sauce and chilies. Set aside.

2. In large fry pan, cook turkey and onions until meat is browned. Drain off fat. Add cumin, beans, yogurt, 125 ml (1/2 cup) of the cheese, half of the taco sauce mixture and water.

3. Place 500 ml (2 cups) Special K* cereal into a 2-quart baking dish coated with cooking spray. Cover with meat mixture. Top remaining taco sauce mixture. Sprinkle with remaining cereal.

4. Bake at 175°C (350°F) about 35 minutes or until thoroughly heated. Sprinkle with remaining cheese. Bake just until cheese melts, about 5 minutes. Garnish with tomatoes, green onions, olive and sour cream, if desired.
