Old Fashioned Spice Cookies

Old Fashioned Spice Cookies
Filled with raisins, these spicy-sweet cookies are a fresh take on an old favourite.

Ingredients

  • 500 ml or 2 cups All-Bran Original* cereal
  • 175 ml or 3/4 cup soft (tub) margarine
  • 300 ml or 1 1/4 cup firmly packed brown sugar
  • 2 eggs
  • 75 ml or 1/3 cup molasses
  • 375 ml or 1 1/2 cup raisins
  • 625 ml or 2 1/2 cups all-purpose flour
  • 10 ml or 2 tsp baking soda
  • 10 ml or 2 tsp ground cinnamon
  • 10 ml or 2 tsp ground ginger
  • 5 ml or 1 tsp ground cloves
  • 1 ml or 1/4 tsp salt

Directions

1. Stir together flour, soda, cinnamon, ginger, cloves and salt. Mix in cereal. Set aside.

2. In large mixer bowl, cream together margarine and brown sugar. Beat in eggs and molasses. Stir in dry ingredients, mixing until well combined. Mix in raisins.

3. Drop dough by rounded 15 ml measure (tablespoonful) 5 cm (2") apart onto lightly greased baking sheets. Flatten with a fork.

4. Bake at 190°C ( 375°F ) 7-8 minutes. Do not overbake or cookies become very crunchy when cooled. Cool 2-3 minutes, then remove to racks and cool completely. Store in airtight container.
