Orange Nut Bread

Ingredients

  • 500 ml or 22 ml Special K* Original cereal
  • 15 ml or 1 tbsp baking powder
  • 10 ml or 2 tsp salt
  • 1 L or 4 cups soft shortening
  • 175 ml or 3/4 cup granulated sugar
  • 2 or - eggs
  • 1 or - can (6 oz) frozen orange juice concentrate thawed
  • 75 ml or 1/3 cup milk
  • 125 ml or 1/2 cup chopped nutmeats

Directions

1. Crush cereal slightly.

2. Sift together flour, baking powder, baking soda and salt.

3. Blend shortening and sugar; add eggs and beat well. Stir in orange juice, milk and nutmeats.

4. Add sifted dry ingredients; mix well. Stir in cereal. Spread in greased 20 x 10 cm (9 1/4" x 5 1/4") loaf pan.

5. Bake in moderate oven 175°C (350°F) about 55 minutes, or until done. Cool thoroughly before slicing.
