Pineapple Bran Muffins

Pineapple Bran Muffins
Topped with a little marmalade, these fruity-sweet muffins might transport you to paradise.

Ingredients

  • 375 ml or 1 1/2 cups all-purpose flour
  • 125 ml or 1/2 cup whole wheat flour
  • 125 ml or 1/2 cup granulated sugar
  • 20 ml or 4 tsp baking powder
  • 5 ml or 1 tsp ground cinnamon
  • 2 ml or 1/2 tsp baking soda
  • 750 ml or 3 cups All-Bran Flakes* cereal
  • 1 can (540 ml / 19 fl. oz.) crushed pineapple
  • 75 ml or 1/3 cup vegetable oil
  • 50 ml or 1/4 cup molasses
  • 1 egg, slightly beaten

Directions

1. In large bowl combine flours, sugar, baking powder, cinnamon and soda; set aside.

2. In medium bowl combine cereal and undrained pineapples. Let stand 1 minute to soften cereal slightly. Stir in oil, molasses and egg; mix well. Add to flour mixture, stirring just until moistened. Portion batter evenly into large paper-lined or lightly-greased muffin-pan cups.

3. Bake at 200°C (400°F) 20-25 minutes or until golden brown and top of muffins springs back when lightly touched.
