Pumpkin Pie Smoothie Bowl
With all the flavours of pumpkin pie, this harvest-inspired bowl can also be served at brunch or as an afternoon snack.

Ingredients

  • 1 1/2 cups (375 mL) canned pumpkin purée
  • 1 1/2 cups (375 mL) plain Greek yogurt
  • 1 banana
  • 1/2 cup (125 mL) ice
  • 1/4 cup (60 mL) milk
  • 1 tbsp (15 mL) honey
  • 2 tsp (10 mL) pumpkin pie spice
  • 1 tsp (5 mL) vanilla extract
  • 2 cups (500 mL) Mini-Wheats* Original cereal
  • 1/4 cup (60 mL) pumpkin seeds
  • 2 tbsp (30 mL) toasted chopped walnuts

Directions

1. In blender, combine pumpkin purée, yogurt, banana, ice, milk, honey, pumpkin pie spice and vanilla; mix until smooth.

2. Divide smoothie evenly among 4 bowls. Top with cereal, pumpkin seeds and walnuts. Serve immediately.

Tips: Substitute maple syrup for the honey if desired. You can substitute pecans or almonds for walnuts.For added sweetness, use vanilla yogurt instead of plain yogurt.
