Raisin Spice Cookies

Raisin Spice Cookies
Molasses, raisins, and spices pack these lunchbox-perfect cookies with flavour.

Ingredients

  • 625 ml or 2 1/2 cups all-purpose flour
  • 10 ml or 2 tsp. baking soda
  • 5 ml or 1 tsp. ground cinnamon
  • 5 ml or 1 tsp. ground ginger
  • 2 ml or 1/2 tsp. ground cloves
  • 750 ml or 3 cups All-Bran Original* cereal
  • 300 ml or 1 1/4 cups firmly packed brown sugar
  • 2 eggs
  • 75 ml or 1/3 cup molasses
  • 500 ml or 2 cups raisins
  • 75 ml or 3/4 cup granulated sugar (optional)
  • 175 ml or 3/4 cup soft (tub) margarine

Directions

1. Stir together flour, soda, cinnamon, ginger and cloves. Mix in cereal. Set aside.

2. In large mixer bowl, cream together margarine and sugar. Beat in eggs and molasses. Stir in dry ingredients, mixing until well combined. Mix in raisins.

3. Drop dough by rounded 15 ml measure (tablespoonful) 5 cm (2") apart onto lightly-greased baking sheets. Flatten with a fork.

4. Bake at 190°C (375°F) 7-8 minutes. (Do not overbake or cookies will become crunchy rather than chewy). Cool 2-3 minutes, then remove to racks to cool completely. Store in airtight container.
