Raspberry Streusel Bars
Tart-sweet raspberry jam, is sandwiched between crumbly layers of cinnamon and brown sugar sweetened streusel.

Ingredients

  • 250 ml or 1 cup All-Bran Original* cereal
  • 175 ml or 3/4 cup all-purpose flour
  • 175 ml or 3/4 cup whole wheat flour
  • 175 ml or 3/4 cup firmly packed brown sugar
  • 2 ml or 1/2 tsp baking soda
  • 1 ml or 1/4 tsp salt
  • 1 ml or 1/4 tsp ground cinnamon
  • 75 ml or 1/3 cup soft margarine
  • 25 ml or 2 tbsp water
  • 175 ml or 3/4 cup raspberry jam
  • 5 ml or 1 tsp icing sugar (optional)

Directions

1. In medium bowl combine cereal, flours, sugar, soda, salt and cinnamon. Using pastry blender or fork, cut in margarine until mixutre resembles coarse crumbs. Stir in water ( mixture will be crumbly ). Set aside 250 ml (1 cup) of mixture. Press remainder into bottom of greased 2 L (9x9") square baking pan using back of spoon.

2. Gently spread jam over cereal mixture. Top with reserved cereal mixture, pressing lightly.

3. Bake at 180°C ( 350°F ) 20 - 25 minutes or until lightly browned. Cool slightly before cutting into bars. Dust lightly with icing sugar if desired.
