Savory Salmon Bake

Savory Salmon Bake
Turn ordinary canned salmon into an amazing baked dish.

Ingredients

  • 1 or - can of salmon,
  • 2 or - eggs,
  • 125 ml or 1/21/2 ml milk
  • 2 ml or 1/21/2 ml salt
  • pinch or - pepper
  • 5 ml or 1 tsp lemon juice
  • 5 ml or 1 tsp finely chopped onion
  • 15 ml or 1 tbsp chopped green pepper
  • 500 ml or 2 cups Special K* Original cereal
  • 30 ml or 2 tbsp margarine or butter
  • 30 ml or 2 tbsp all-purpose flour
  • pinch or - salt
  • 250 ml or 1 cup milk
  • 30 ml or 2 tbsp lemon juice
  • 1 or - hard-cooked egg,

Directions

1. Combine all ingredients in medium-sized mixing bowl. Mix well. Spread evenly in well-greased 20 x 10 x 8 cm (9 x 5 x 3") loaf pan.

2. Bake in oven at 175°C (350°F) about 45 minutes. Serve hot with Egg sauce. Sprinkle with paprika or snipped fresh parsley, if desired.

Egg Sauce:

1. Melt margarine in small saucepan over low heat. Stir in flour and salt. Add milk gradually, stirring until smooth.

2. Increase heat to medium and cook until bubbly and thickened, stirring constantly. Just before serving, stir in lemon juice and egg.
