Southwest Meatloaf
A little bit Tex-Mex, a lot of delicious this spiced meatloaf gets an extra kick from its salsa topping.

Ingredients

  • 1 1/4 cups or 300 ml All-Bran Original* cereal
  • 1 cup or 250 ml beef broth
  • 2 eggs
  • 1 tbsp or 15 ml chili powder
  • 1/4 tsp or 1 ml salt
  • 1/4 tsp or 1 ml ground black pepper
  • 1 1/2 lb or 750 g lean ground beef
  • 1 finely chopped medium onion (about 1 cup/250 ml)
  • 1/3 cup or 75 ml flour
  • 1/4 cup or 50 ml each, finely chopped celery, red pepper, and fresh parsley
  • 1 cup or 250 ml chunky salsa
  • 2 tbsp or 25 ml brown sugar

Directions

1. In large bowl, combine cereal and beef broth. Let stand 2 minutes or until broth is absorbed and cereal softens.

2. In small bowl, combine, eggs, chili powder, salt and black pepper.

3. Add egg mixture, beef, onion, flour, celery, red pepper and parsley to cereal mixture. Mix together well.

4. Press mixture well into 9”x 5”x 2½” (23 x 13 x 6 cm) loaf pan, lined with parchment and sprayed with cooking spray. Bake in 350°F (180°C) oven until food thermometer reads 160°F (71°C) at center of meatloaf – about 1 hour 15 minutes. Let stand 10 minutes before slicing. Turn onto serving platter and serve with Sweet Salsa Sauce*.

* Sweet Salsa Sauce: In small saucepan, heat salsa and brown sugar to a boil. Simmer for 3 minutes, stirring occasionally.

Tip: This meat mixture is also enough to make 2 dozen mini-hamburgers, instead of meatloaf.

For Southwest Sliders: Form the uncooked meat mixture into 3” (7 1/2 cm) patties. Heat a non-stick skillet, lightly coated with cooking spray, at medium heat. Cook patties in batches until food thermometer reads 160°F (71°C) at center of patties - about 2 -3 minutes per side. Serve on toasted mini-hamburger buns with Sweet Salsa Sauce, above, along with fresh toppings and condiments, such as: shredded lettuce, diced onions, sliced tomatoes and avocado.
