Spiced Raisin Muffins

Spiced Raisin Muffins
Best served warm, with a pat of butter, cup of coffee and a roaring fire.

Ingredients

  • 250 ml or 1 cup All-Bran Original* cereal
  • 250 ml or 1 cup skim milk
  • 1 egg
  • 45 ml or 3 tbsp vegetable oil
  • 125 ml or 1/2 cup raisins or finely cut pitted dates
  • 250 ml or 1 cup all-purpose flour
  • 12 ml or 2 1/2 tsp baking powder
  • 1 ml or 1/4 tsp salt
  • 50 ml or 1/4 cup granulated sugar
  • 5 ml or 1 tsp ground cinnamon
  • 2 ml or 1/2 tsp ground nutmeg

Directions

1. In mixing bowl, combine cereal and milk; let stand until most of the moisture is taken up, about 5 minutes. Add egg and oil; beat well. Stir in raisins or dates.

2. Stir together flour, baking powder, salt, sugar, cinnamon and nutmeg. Add to cereal mixture, stirring just until combined. Fill greased muffin pans 2/3 full.

3. Bake at 200°C ( 400°F ) 18-20 minutes or until golden brown and firm to the touch. Serve hot.
