Spicy Southwest Meatloaf
This meatloaf is moistened with a spicy salsa and topped with gooey melted cheese.

Ingredients

  • 500 g or 1 lb extra lean ground beef
  • 375 ml or 1 1/2 cups All-Bran Original* cereal
  • -OR-
  • 250 ml or 1 cup soft breadcrumbs
  • 375 ml or 1 1/2 cups hot medium or mild salsa
  • 1 egg
  • 125 ml or 1/2 cup parsley
  • 125 ml or 1/2 cup shredded cheddar cheese

Directions

1. Combine beef, cereal, breadcrumbs, salsa, egg and parsley.

2. Press mixture into 2 L (9 x 5-inch) loaf pan with wet hands.

3. Bake at 180°C (350°F) for 60 minutes. Remove loaf from oven and top with shredded cheese. Return to oven and bake until cheese melts and meatloaf is cooked through, about 5 to 10 minutes. Let cool for 10 minutes before slicing.

Tip: The type of salsa used will determine the heat, so choose what your family likes.

Variation: Substitute ground turkey for beef.
