Strawberry Bran Muffins
There’s no need to spread these classic bran muffins with a favourite topping, the jam is baked into them.

Ingredients

  • 250 ml or 1 cup all-purpose flour
  • 75 ml or 1/3 cup granulated sugar
  • 12 ml or 2 1/2 tsp baking powder
  • 1 ml or 1/4 tsp salt
  • 250 ml or 1 cup All-Bran Original* cereal
  • 250 ml or 1 cup milk
  • 1 egg
  • 45 ml or 3 tbsp vegetable oil
  • 50 ml or 1/4 cup strawberry jam

Directions

1. Stir together flour, sugar, baking powder and salt. Set aside.

2. Measure cereal and milk into large mixing bowl. Stir to combine. Let stand 3 minutes or until most of the moisture is taken up. Add egg and oil. Beat well.

3. Add flour mixture, stirring just until combined. Spoon batter evenly into 12 lightly greased muffin pan cups. Make a deep indentation in the top of batter of each muffin. Fill each with 5 ml (1 tsp) of jam.

4. Bake at 200°C (400°F) about 20 minutes or until golden brown and firm to the touch. Serve warm.

Variation: Omit jam if desired. Instead, before baking, sprinkle with a mixture of ground cinnamon and sugar.
