1. Combine flour, sugar, baking powder and salt. Set aside.
2. In large bowl, combine cereal and milk. Let stand for two minutes or until cereal is softened. Add egg and oil. Beat well. Add flour mixture, stirring just until combined. Portion evenly into 6 cm (2 1/2") muffin-pan cups coated with cooking spray.
3. Make a deep indentation on top of batter for each muffin. Fill each with 5 ml (1 tsp) measure of jam.
4. Bake at 200°C (400°F) about 18 minutes or until lightly browned. Serve warm, with cream cheese if desired.
