Tangy Apple Bran Salad
With crisp apples and raisins, this is a delicious way to enjoy salad even after summer has faded away.

Ingredients

  • 125 ml or 1/2 cup plain, low-fat yogurt
  • 10 ml or 2 tsp granulated sugar
  • 5 ml or 1 tsp lemon juice
  • 10 ml or 2 tsp chopped fresh parsley
  • 1 ml or 1/4 tsp salt or to taste
  • 2 medium red apples,
  • 125 ml or 1/2 cup thinly sliced celery
  • 50 ml or 1/4 cup raisins
  • 75 ml or 1/3 cup All-Bran Original* cereal
  • n/a lettuce (Optional)

Directions

1. Combine yogurt, sugar, lemon juice, parsley and salt. Stir in apples, celery and raisins. Cover and refrigerate until ready to serve.

2. Just before serving, stir, then mix in cereal. Serve on lettuce if desired.

Variation: Replace raisins with 125 ml (1/2 cup) halved seedless green grapes
