Apricot Date Muffins
Bursting with dried fruit, these muffins are made with orange juice for even more flavour.

Ingredients
- 500 ml or 2 cupsAll-Bran Flakes* cereal
- 175 ml or 3/4 cupall-purpose flour
- 125 ml or 1/2 cupwhole-wheat flour
- 125 ml or 1/2 cupgranulated sugar
- 10 ml or 2 tspbaking powder
- 2 ml or 1/2 tspground cinnamon
- 1 ml or 1/4 tspbaking soda
- 1 ml or 1/4 tspsalt
- 250 ml or 1 cuporange juice
- 1egg
- 50 ml or 1/4 cupvegetable oil
- 75 ml or 1/3 cupfinely-chopped dried apricots
- 75 ml or 1/3 cupfinely-chopped pitted dates
Directions
1. Stir together flours, sugar, baking powder, cinnamon, soda and salt. Set aside. 2. In large bowl mix cereal and orange juice. Let stand 2 minutes to soften cereal, stirring once. Add egg, oil, apricots and dates. Beat well. Add flour mixture, stirring just until combined. Spoon batter evenly into lightly-greased 6 cm (2 1/2") muffin-pan cups. 3. Bake at 200°C (400°F) 18-20 minutes or until golden brown and tops spring back when lightly touched.
