- 75 ml or 1/3 cupsugar
- 500 ml or 2 cupsSpecial K* Original cereal
- 300 ml or 1 1/4 cupskim milk
- 1 egg
- 50 ml or 1/4 cupvegetable oil
- 175 ml or 3/4 cupchopped pitted prunes
- 1 ml or 1/4 tspcinnamon
- 15 ml or 1 tbssugar
Directions
1. Stir together flour, baking powder, salt and 50 ml (1/4 cup) sugar. Set aside. 2. In large mixing bowl, combine Special K* ereal and milk. Stir to combine. Let stand 2 minutes. Add egg and oil. Beat well. Stir in prunes. Add flour mixture, stirring only until combined. Spoon batter evenly into twelve, 2 inch muffin pan cups coated with cooking spray. Stir together cinnamon and the 25 ml (2 tbsp) sugar. Sprinkle over muffin batter. 3. Bake at 200°C (400°F) about 20 minutes or until golden brown. Serve warm.
