Dried Cherry Banana Muffins
Move over chocolate chips, tart cherries add a new flavour dimension to classic banana muffins.

Ingredients
- 375 ml or 1 1/2 cupsall purpose flour
- 10 ml or 2tspbaking powder
- 2 ml or 1/2 tspbaking soda
- 1 ml or 1/4 tspsalt
- 2 ml or 1 tspground cinnamon
- 375 ml or 1 1/2 cupsAll-Bran Original* cereal
- 250 ml or 1 cupbuttermilk
- 250 ml or 1 cupmashed ripe bananas (about 3 bananas)
- 50 ml or 1/4 cupsafflower oil
- 50 ml or 1/4 cupNaturegg Simply Egg Whites, well shaken
- 125 ml or 1/2 cupbrown sugar, lightly packed
- 250 ml or 1 cupdried sour cherries
Directions
- In medium bowl whisk together flour, baking powder, baking soda, salt and cinnamon; set aside.
- In large bowl combine buttermilk and All-Bran® Original cereal. Let stand for 5 minutes or until cereal is softened.
- Stir in banana, oil, Naturegg™ Simply Eggs™ and sugar; mix well.
- Add flour mixture, stirring only until combined. Stir in dried cherries. Do not over-mix.
- Spoon batter into a twelve cup muffin pan that has been sprayed with no-stick cooking spray or lined with paper liners
- Bake in centre of preheated 400°F ( 200°C) oven for 20 to 25 minutes or until golden and toothpick inserted into centre comes out clean. Cool on wire rack 5 minutes; remove muffins from pan.
Tip: Substitute some of the all-purpose flour with whole wheat by using 3/4 cup whole wheat flour and 3/4 cup all-purpose.
