Chef's Salad
With chicken, eggs, blue cheese and ripe avocado, this scrumptious salad makes for a filling meal.

Ingredients

  • n/a Salad:
  • 125 or 1/2 cup All-Bran Original* cereal
  • 1 head iceberg lettuce
  • 250 ml or 1 cup cooked skinless chicken breast, cubed
  • 2 hardboiled eggs, chopped
  • 1 ripe avacado, peeled, stoned and cut into chunks
  • 15 ml or 1 tbsp blue cheese / Roquefort, chunks
  • n/a Dressing:
  • 5 ml or 1 teaspoon Dijon mustard
  • 75 ml or 5 tbsp olive oil
  • 30 ml or 2 tbsp red wine vinegar
  • n/a sea salt and pepper to taste

Directions

Salad:

- Tear the iceberg lettuce into pieces and place in a large bowl.

- Toss in chicken, hardboiled eggs, All-Bran Original* cereal, avocado, and blue cheese/Roquefort chunks.

Dressing:

- Whisk together the dressing ingredients in a separate bowl; pour over the salad before tossing everything together. Serve and enjoy.
