Ingredients
- 500 ml or 2 cupsall-purpose flour
- 125 ml or 1/2 cupgranulated sugar
- 5 ml or 1 tspbaking powder
- 2 ml or 1/2 tspbaking soda
- 2 ml or 1/2 tspsalt
- 250 ml or 1 cupAll-Bran Buds* cereal
- 325 ml or 1 1/3 cups2% milk
- 2eggs
- 125 ml or 1/2 cupvegetable oil
- 250 ml or 1 cupfinely chopped dates
- 125 ml or 1/2 cupcoarsely chopped walnuts or pecans
Directions
1. In medium bowl, mix together flour, sugar, baking powder, baking soda and salt. Set aside. 2. In large mixing bowl, mix together cereal and milk. Let stand for 5 minutes or until cereal is softened. 3. Stir in eggs and oil; beat well. Stir in dates and nuts. Add flour mixture, stirring only until combined. 4. Spread batter evenly in 23 x 13 cm (9 x 5-inch) loaf pan coated with non-stick cooking spray. 5. Bake at 180°C (350°F) for about 60 minutes or until wooden pick inserted in centre comes out clean. Let cool 10 minutes before removing from pan. Let cool completely on wire rack before slicing. Wrap with plastic wrap.
