Green Apple Smoothie Bowls
With greens, avocado and banana, this autumn-inspired power bowl is nutritious and delicious at breakfast.

Ingredients

  • 3 green apples, cored and divided
  • 1 ripe avocado, peeled and pitted
  • 1 1/2 cups (375 mL) almond milk
  • 1 banana
  • 1 cup (250 mL) spinach
  • 1 cup (250 mL) kale
  • 2 tbsp (30 mL) maple syrup
  • 1 cup (250 mL) Vector* Meal Replacement cereal
  • 1/4 cup (60 mL) toasted pumpkin seeds
  • 1/4 cup (60 mL) dried cranberries
  • 1/4 cup (60 mL) toasted chopped pecans

Directions

1. Slice 1 green apple and set aside. Chop remaining apples; add to blender along with almond milk, avocado, banana, spinach, kale and maple syrup; mix until smooth.

2. Divide smoothie among 4 bowls. Top with cereal, reserved sliced apples, pumpkin seeds, dried cranberries and pecans.

Tips: For very smooth results, peel apples for smoothie. Substitute walnuts, hazelnuts or almonds for the pecans if desired.
