Orange and Broccoli Salad
The freshness of orange segments brightens the flavour of this creamy broccoli salad.

Ingredients

  • 1 L or 4 cups coarsely chopped broccoli
  • 625 ml or 2 1/2 cups orange segments, chopped nectarines or mangoes
  • 125 ml or 1/2 cup thinly sliced red onion
  • 125 ml or 1/2 cup low-fat ranch dressing
  • 30 ml or 2 tbsp orange juice
  • 5 ml or 1 tsp grated orange rind
  • 1 ml or 1/4 tsp hot pepper sauce
  • 250 ml or 1 cup All-Bran Buds* cereal

Directions

1. In large bowl, mix together broccoli, orange segments and onion.

2. In small bowl, mix together ranch dressing, orange juice and rind and hot pepper sauce. Drizzle over broccoli mixture; toss to coat.

3. Cover and refrigerate for a minimum of 30 minutes or up to 2 hours.

4. Gently stir in cereal. Serve immediately.
