Ingredients
- 1 cup
white sugar
- ½ cup
white corn syrup
- 2 cups
- 1 tbsp
butter
- 1 tsp
vanilla extract
- 1 tsp
baking soda
- 1 ½ cups
semi-sweet chocolate, divided
Directions
1. In a large microwave safe bowl, heat the white corn syrup, and sugar on HIGH for 3 ½ minutes stirring halfway.
2. Stir in the Kellogg’s Corn Flakes® cereal and microwave on HIGH for 2 ½ minutes. Stir in the butter and vanilla, microwave on HIGH for 1 ½ minutes.
3. Stir in the baking soda until the mixture becomes light and foamy. Quickly empty the bowl on a greased or parchment lined baking sheet and spread into a thin even layer. Allow the brittle to cool completely before using a wooden spoon to break it into bite sized pieces.
4. Add 1 cup of semi-sweet chocolate to a medium microwave safe bowl. Heat on HIGH for 1 ½ minutes, stirring every 30 seconds until completely melted and smooth. Add the remaining ½ cup of semi-sweet chocolate and stir until melted and smooth.
5. Carefully dip each piece of brittle fully or partially into the chocolate and place on a parchment lined baking sheet to harden. Allow the chocolate to set for 30 to 40 minutes.
